I make a crustless quiche pretty frequently. Here's my formula. (Formula rather than recipe because it's so damn adaptable!)

6 eggs
1 cup of milk (I've used skim, 2%, whole, cream, evaporated...any kind works! You can use 1/2 c. milk, 1/2 c. sour cream for extra richness and a slight bit of tanginess.)
1 cup of shredded cheese, your choice
1 cup of veggies

Sometimes, I'll put bacon or ham or steak in there. As long as you don't add a whole pig or cow, it doesn't really effect the other ingredients. But yeah, whisk the hell out of the eggs and milk, season it with whatever you like, layer the veggies, cheese, and meat in a greased pie plate, then pour the eggs over. It usually takes about 30 mins. @ 350 degrees.
